Ballarò, the "frittola": a heterogeneous set of veal offal (slaughterhouse waste, "bold", small cartilage, bones, etc ...) which are first boiled and then browned, often with lard, according to very variable recipes. It is served on a soft bun, and seasoned with pepper and lemon.
